A 31-year-old editor’s seven-layer lemon Swiss roll and amaretti trifle beat 5,000 desserts in a UK-wide competition to become the official pudding – or dessert, if you don’t. ‘re not British – from the Queen’s Platinum Jubilee.

Contest organizers hope people across Britain will serve Jemma Melvin’s bright, bittersweet and sweet concoction topped with whipped cream and crumbled biscuits at block parties and backyard tea parties in part of celebrations from June 2 to 5 to mark Queen Elizabeth II’s 70 years on the throne.

Melvin, from Southport in the North West of England, said his creation was inspired by both his grandmothers and the Queen.

“This particular trifle is a tribute to three women: it’s my grandmother, my grandmother and the queen herself,” Melvin said. “My grandmother taught me how to cook, she taught me all the elements, everything from scratch. My grandmother’s signature dish was always a trifle; we used to call it the queen of trifles. And the queen had lemon at her wedding.”

The competition was announced in January as Jubilee organizers sought to find a modern counterpart to Coronation Chicken, the combination of cold poultry, mayonnaise and curry powder created for the festivities on the day in 1953 that Elizabeth was crowned. .

The winner was announced by the Duchess of Cornwall, wife of Prince Charles, on Thursday night during a national BBC television broadcast. The organizers then posted the recipe online so anyone wanting to try making it could have the exact instructions.

Melvin’s trifle beat out four other finalists: a thyme frangipane passion fruit tart; Queen Elizabeth sponge cake, featuring a layer of jam made with the monarch’s favorite Dubonnet wine; a rose falooda cake with the flavors of a traditional Indian dessert; and a “four nations” pudding with ingredients from across the country.
